Basic Bitch Chicken Thighs

  • 6-8 chicken thighs, bone-in or boneless
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper
  • ¼ cup lime juice
  • ¼ olive oil
  • Combine equal parts lime juice and olive oil, enough to marinate chicken thighs in. Add salt/spices.

    Marinate chicken thighs for at least a few hours.

    Bake chicken thighs in a pan in the oven at 400 degrees for 35-40 minutes, or until done.

    Lemon Curd

  • ½ cup sugar
  • 1 cup water
  • ½ cup lemon juice, plus an extra 1 tbsp
  • 2 whole eggs, 1 egg yolk
  • 2 tbsp cornstarch, or whatever other starch you have on-hand
  • 2 tsp lemon zest, or whatever citrus zest is convenient
  • Mix sugar and starch together in a small saucepan.

    Whisk in water and the ½ cup of lemon juice, continue whisking until smooth.

    Cook over medium-high heat until thick and bubbly, this should take a few minutes. Then, reduce heat to low and stir for 2 more minutes.

    Scramble the eggs and egg yolk together. Pour a small amount of the hot lemon mixture in while stirring the eggs to temper them, then add the tempered eggs back into the saucepan.

    Bring curd to a boil, then cook while stirring for 2 more minutes.

    Remove from heat, add zest and remaining lemon juice.

    Let cool on counter until cooled enough to put in the fridge.

    Cover and refrigerate until cold.

    Bread Pudding

  • Enough bread to loosely fill your container, brioche or challah is ideal
  • 2 cups heavy cream
  • ½ cup sugar
  • 4 eggs
  • Spices to taste.
  • Optional: 1/3 cup of chopped fruit or chocolate chips
  • Cube or tear your bread into 1-2 inch pieces, then dump them into a greased loaf pan. If adding fruit, start with a layer of bread, then a layer of fruit, then a layer of bread. If adding chocolate chips, sprinkle them throughout as you add bread.

    Whisk together cream, eggs, and sugar. Add your spices to the custard as well; if not using fruit I recommend equal parts cinnamon, nutmeg, and cloves. If you're using fresh ginger or cinnamon sticks let it steep for at least 10 minutes.

    Pour the custard over the bread, going slowly to make sure it gets absorbed by the bread and doesn't overflow.

    Bake at 350 dgrees for about 45 minutes. Optionally, remove from the oven about halfway through and sprinkle the top with a little bit of sugar, then finidh baking as normal.

    Let cool and serve. Leftovers can be sliced and pan fried if you want them warm.
